MMM, instant peachy, creamy oatmeal. I enjoyed many bowls during my 80s childhood. I could make it myself, it had fruit and oatmeal -total healthfood, and finally, it was ready in about a minute. While my tastes and health knowledge have matured over the years, a creamy oatmeal filled with peaches still sounds tasty. Plus, I knew my kids would be thrilled to eat their oatmeal if it had peaches as an ingredient. I have been using my Instant Pot® to make various steel cut oat recipes, but there was a request for "regular" oatmeal. Since the Instant Pot® works just as well for rolled oats, that is what I used in this recipe.
This recipe for peaches and cream oatmeal in the Instant Pot® pressure cooker is indeed a health food. This oatmeal is full of whole grain goodness, natural fruit and can be topped with optional flax meal, nuts, cream or non-dairy milk of your choice, and maple syrup for a bit of sweetness.
Peaches and Cream Oatmeal
2 cups rolled oats
4 cups water
1 peach, chopped
1 teaspoon vanilla
2 tablespoons flax meal
1/2 cup chopped almonds
splash of milk, cream, or non-dairy milk
maple syrup to taste
1. Add oats, water, peaches, and vanilla to the Instant Pot®. Set to porridge - high pressure, making sure the valve is set to sealing. Adjust the time to 3 minutes. When finished allow the pressure to release naturally for 10 minutes before doing a quick pressure release by setting the valve to venting.
2. Divide between 4 bowls, top with optional ingredients, and serve immediately.
