This is one of my favorite pressure cooker steel cut oat recipes. First of all, let me tell you why I love using my Instant Pot ® for steel cut oatmeal. Steel cut oats are whole oat groats that instead of being rolled are cut into pieces. They are a whole-grain, and have a nutty flavor and chewy texture. Typically, they are made on the stove top, but they require that you pay attention and take at least 25 minutes of simmering. In a pressure cooker, you add everything to the pot, and once it has reached temperature, you have PERFECT steel cut oatmeal in 10 minutes. You do not have to pay attention to it and it never burns (not that I would know anything about that).
Steel cut oatmeal is a great breakfast because there are so many ways to serve it. My favorite is with a generous pinch of salt, dab of butter, and a drizzle of maple syrup. This just takes that up a notch, with the addition of frozen or fresh blueberries and raw slivered almonds. Healthy, delicious, fast, and a real crowd-pleaser.
Maple Blueberry Almond Steel Cut Oatmeal
1 cup steel cut oatmeal
1 2/3 cups water
pinch of salt
raw slivered almonds
1. Place steel cut oats and water into instant pot. Add a pinch of salt. Set to porridge and adjust time to 10 minutes, making sure the pressure release valve is set to sealing.
2. When finished allow pressure to release naturally.
3. Divide among 4 bowls and top with blueberries, maple syrup and raw slivered almonds.
Optional: I also add a pat of butter and splash of cream.
