Sweet Potatoes are one of the foods that I always have on hand. I used to roast them in the oven once a week. Now I throw a bunch in the Instant Pot® and have them ready to go for a dinner side dish, an add-in to a breakfast hash, or as one of the main ingredients in my favorite Sweet Potato and Black Bean Lasagna. Instant Pot® Sweet Potatoes are tender, creamy, and an easy way to make sure you have nutritious foods available.
To make Instant Pot® Sweet Potatoes, wash and prick 5-6 small to medium sized potatoes. Place the steamer insert into the Instant Pot® and layer the sweet potatoes on top. Add two cups of water and lock the lid in place. Adjust to manual - high pressure for 10 minutes, making sure the valve is in the sealing position. When finished, do a quick pressure release by setting the valve to venting. Allow to cool before serving or store in an airtight container for up to 5 days. If using large sweet potatoes, adjust the time to 12-15 minutes.
