When I was little, my yiayia used to make what she called, Greek Fish. Sadly, I do not have her recipe. I do remember that she cooked whitefish in a tomato-based sauce, and it was delicious. Over the years, I have tried to recreate her recipe and I feel like the recipe I am going to share is the closest I have come. I rarely use theInstant Pot® for fish because it is an expensive ingredient and I would hate to waste it on a bad recipe. Now that I have had success with fish in the Instant Pot®, I plan to branch out and try more ideas.
For this recipe, I used frozen cod. We are landlocked, so when I can't get to the fish market for fresh fish, I prefer using frozen. Cod is a little sturdier than other whitefish, which can fall apart if overcooked. If you have access to quality fresh cod, it would be even better - the time just needs to be reduced slightly. I created the sauce using the saute function. This allowed me to reduce some of the liquid and concentrate the flavors before adding the fish. Once finished reducing, I simply added the frozen fish pieces, covered them with sauce, and cooked on high pressure for 5 minutes. If you use fresh fish, reduce the time to 3 minutes. You will know it is cooked, when it flakes easily.
Mediterranean-style Cod in the Instant Pot®
6 pieces of frozen or fresh cod (about 1.5 pounds)
3 tablespoons butter
1 lemon, juiced
1 onion, sliced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon oregano
1- 28 oz. can diced tomatoes
1. Set the Instant Pot® to saute. Melt the butter. Add remaining ingredients, stirring to combine. Saute for 8-10 minutes.
2. Arrange the fish portions in the sauce, using a spoon to cover each piece with some of the sauce. Lock the lid making sure the valve is in the sealing position. Set the Instant Pot® to manual-high pressure for 5 minutes (3 for fresh fish). When finished, do a quick pressure release by setting the valve to venting. Serve immediately with plenty of sauce.
