I always forget how much I love Chicken Cacciatore. It is so easy to make, full of rich flavors, and can be adapted for the Instant Pot®. Chicken Cacciatore is an Italian stewed chicken that simmers slowly in tomato sauce. It can be served over rice, noodles, or even on its own. Some recipes call for dusting the chicken in flour. I never do this, which makes this a great gluten-free recipe. I think the sauce is thick and rich without any added starch.
Because I used the Instant Pot® to make this recipe, there was a lot of time spent browning. You can certainly use a skillet to brown the chicken and vegetables, but I don't like to clean up too many pans. If you use theInstant Pot® you will have to brown the chicken in two batches and then brown the vegetables. This took about 20 minutes. Be patient, because taking the time to do this will lead to a very flavorful stew.
Instant Pot® Chicken Cacciatore
1 tablespoon olive oil
8 oz. crimini or button mushrooms, sliced
1 red pepper, sliced
1 large onion, diced
1 whole cut-up chicken (or 8 pieces)
3 cloves garlic, minced
1 tablespoon tomato paste
1/2 cup red wine
1 48 oz. can crushed tomatoes
1 teaspoon of salt, divided
1/2 teaspoon pepper, divided
1 bay leaf
1/2 teaspoon dried thyme
2 tablespoons capers, rinsed
1. Set Instant Pot® to saute. Heat olive oil until shimmering. Season the chicken pieces with half of the salt and pepper. Brown in the oil in two batches, about 3 minutes per side. Set aside.
2. Add onion, pepper, and mushrooms to the pan and brown for about 8-10 minutes, until slightly soft. Add garlic and tomato paste and stir for about 30 seconds. Deglaze with wine and stir in crushed tomatoes.
3. Return the chicken to the pot and season with remaining ingredients. Set the Instant Pot® to manual-high pressure, making sure the valve is in the sealing position. Adjust the time to 23 minutes. When finished, do a quick pressure release by switching the valve to venting. Serve immediately.
