I have been working on a dessert for a couple of weeks, and so far, it is a no-go. So while I keep trialing and testing, I will instead bring you a really tasty recipe for Honey Chipotle Barbecue Chicken Thighs in the Instant Pot®. The recipe uses the Honey Chipotle Barbecue Sauce from the blog. On a rainy summer day like today, I like recipes like this that bring the flavors of a sunny barbecue indoors.
I lovechipotle peppers in adobo sauce, and always try to have them on hand. They keep really well in the fridge and can be used in a variety of ways. My friend Kim, from the vegan blog Welcoming Kitchen, uses them in her Vegan Street Tacos. YUM. I use them to make Chipotle Honey Barbecue Sauce and smother chicken thighs in their tasty goodness. Smoky, spicy, sweet, and delicious.
Honey Chipotle Barbecue Chicken Thighs
1 teaspoon olive oil
2 lbs. boneless skinless chicken thighs
salt and pepper to taste
2 cups Honey Chipotle Barbecue Sauce
1. Set Instant Pot® to saute and heat olive oil until shimmering. Season the chicken with salt and pepper and brown on both sides for about 4-6 minutes.
2. Set the Instant Pot® to manual - high pressure. Coat the chicken with the barbecue sauce and adjust time to 10 minutes, making sure the valve is in the sealing position. When finished, do a quick pressure release by moving the valve to venting.
3. Carefully remove the chicken to a foil lined sheet pan. Place under the broiler for about 6-8 minutes, turning once to brown evenly.
4. While the chicken is browning, set the Instant Pot® to saute and simmer the sauce. When the chicken is finished browning, pour the sauce over the chicken and serve.
