I have been trying to find a fall-themed dessert that I could make in the Instant Pot®. I came up with several ideas, but I really wanted to be able to make a simple pumpkin pie. I love this recipe for its simplicity and deliciousness. I call this recipe "weeknight pumpkin pie." While it is certainly tasty enough for Thanksgiving, you are limited by the size of the Instant Pot®. I used my7 in. spring form pan, which makes a dessert that serves 6-8 people. If you host a small Thanksgiving, then this is the perfect dessert. Otherwise, you can make it for an easy, but special weeknight dessert.
A friend recently dropped off a large bowl of beautiful carrots from her garden. She was headed out of town and knew I would be able to use them. I am so glad she did! I have been wanting to try Deviled Carrots in the Instant Pot® almost since I bought my pressure cooker.
I love Mother's Day. As both a mom and daughter, I love to spend time with both my mom and my children on this special day. We plant some beautiful flowers in the garden together and then enjoy a delicious meal, usually prepared by the moms. I plan to do some cooking in my Instant Pot® today, so I can head over tomorrow, relax, and let the boys do the rest of the work. Here are some ideas for breakfast/brunch, dinner and dessert that you could use to make your Mother's Day a little more special and delicious. It is almost Easter, and for us that means making lots of hard boiled eggs to dye. Nobody except for me enjoys eating them (and when I say I enjoy, I mean that very loosely). Because of that, I typically take little care when boiling eggs for dyeing. They are overcooked, have that nasty green ring and many end up cracked. Since the will be spending the night at room temperature in my living room, they go straight in the trash. However, I hear that some folks let their children dye eggs just for fun and then the big bunny hides plastic eggs instead. If this is what happens in your house, perhaps a dyed pressure cooker hard boiled egg is something you would enjoy eating.
There is something so comforting about a plate of boiled Corned Beef and Cabbage. I think about it throughout the year, even though I only eat it on St. Patrick's Day. It holds many fond childhood memories, and I like to think that I am passing along similar ones to my family. St. Patrick's Day is still 5 days away, but I think most people do their celebrating the Saturday before. Unofficial St. Patrick's Day, perhaps? Tonight, we are celebrating too. Traditional Corned Beef and Cabbage cooked in the Instant Pot® is on the menu. This was so delicious and fast that we might celebrate again on the official holiday, next Thursday.
