Sweet Potatoes are one of the foods that I always have on hand. I used to roast them in the oven once a week. Now I throw a bunch in the Instant Pot® and have them ready to go for a dinner side dish, an add-in to a breakfast hash, or as one of the main ingredients in my favorite Sweet Potato and Black Bean Lasagna. Instant Pot® Sweet Potatoes are tender, creamy, and an easy way to make sure you have nutritious foods available.
For years I was afraid of polenta. I enjoyed it at restaurants - in all sorts of preparations. One of my favorite experiences involved having it poured over a board and covered with a tomato jam, of sorts. I had it with an amazing glass of Pinot Noir. So delicious. In the last two years, I have ventured into the world of polenta. It is incredibly easy and I can't believe I waited so long to learn how to make it. When I decided to make it in the Instant Pot®, I was hesitant. However, any other porridge has worked really well. It was amazing. Creamy Polenta in the Instant Pot® pressure cooker comes out perfectly every time. Serve it with roasted tomatoes, and you have a lovely light lunch or dinner, perfect for summer.
Pressure cooker ribs are a cinch. When I bought the Instant Pot®, I thought that everything would cook really quickly. I was misinformed. There is a significant amount of time spent waiting for the pressure cooker to come to pressure before the actual cooking time begins. I love it for so many reasons, but I would be misleading you if I told you that it always helped me get dinner on the table faster. Soups, stews, and other slow-cooked foods are an exception and ribs fall into that category. Good ribs usually take 3-4 hours to properly cook. In an Instant Pot®, they are ready in about an hour total.
Despite feeling like mid-March most days here in the Midwest, summer is about a month away. What does that mean? Corn on the Cob! My absolute favorite way to make it, is to grill it in the husk. My absolute second favorite way to make it, is to steam it in the Instant Pot®. Nothing could be more simple and I loved not having to fuss with boiling corn on the stove, because sometimes I don't pay attention and it overcooks. Nobody likes that.
Macaroni and Cheese is the ultimate comfort food, and I love it in any form. Stove top, baked, from a little blue box - you get the idea. I also love making kid-friendly recipes that I can doctor up to suit my adult tastes. Creamy Mac and Cheese in an Instant Pot® is one of the best kid-friendly meals and it lends itself beautifully to "adult" variations. Kids and grownups alike will love this creamy, whole-grain macaroni and cheese. Serve it plain or doctored, and I promise, dinner will be a hit!
Ratatouille. Did I spell that correctly? Ratatouille in an Instant Pot® - yes! Did you ever see the cute Disney movie by the same name? Despite my hatred for rats (hey, big city living), I adore that movie. I could watch it again and again, and it always warms my heart. I also adore ratatouille. It is a really easy dish to prepare. Savory, stewy, and the perfect side for chicken, fish, or even as a pizza or pasta topping. It is naturally vegan and gluten-free, which makes it a great dish to have in your recipe repertoire.
I love Mother's Day. As both a mom and daughter, I love to spend time with both my mom and my children on this special day. We plant some beautiful flowers in the garden together and then enjoy a delicious meal, usually prepared by the moms. I plan to do some cooking in my Instant Pot® today, so I can head over tomorrow, relax, and let the boys do the rest of the work. It's my birthday week and it is also Cinco de Mayo. Since I love Mexican food, margaritas, and celebrations, I decided to make chicken tacos using the Instant Pot® to celebrate. These were so fun and very delicious. Dressed with a little white onion, lime juice, and cilantro, these were the perfect tacos to celebrate Cinco de Mayo and my Birthday.
